Take a handful of fresh mint leaves and place them in a bowl of boiling water to release their wonderful flavour and scent. Adjust the sweetness of the tea with honey to taste.

How To
- Take a few mint leaves in one hand and clap your other hand sharply on top, then drop the leaves into a teapot. Repeat with the remaining mint, reserving a few smaller sprigs for garnish in each glass.
- Fill the pot halfway with boiling water and leave it for 2-3 minutes, or until the liquid begins to take on a slightly pale yellow/green hue. Strain the tea into cups or heatproof glasses and sweeten it to taste with honey. If desired, place the reserved mint in the cups to decorate.
